On Day 3 at Baking Arts we made raisin & walnut bran muffins and scones with currants. I’m not a fan of scones so all I can say is that I think they turned out tender. The muffins were moist and delicious. Who knew that there were so many ingredients to make a muffin. A cool trick of the trade when making the muffins was to combine the oil with the eggs to form an emulsion. If you don’t do this then you run the risk of the water, oil, eggs, and sugar not combining. When I brought these in to work they were devoured! Seems like they were a hit.
